Steak Bites-Cajun Garlic Butter

Growing up as a child my family ate steak once a week. It was a way to celebrate our accomplishments of a week full of hard work. This new found recipe for Cajun Garlic Butter Steak Bites has my mouth watering. As a result, I share this with those that I love. I will prove my feelings to them & my love of steak. I hope that you will enjoy it as well!!

Ingredients for Cajun Garlic Butter Steak Bites

Cajun Seasoning Blend

steak
  • 1 Tbsp smoked paprika
  • 1 1/2 tsp kosher salt
  • 1 1/2 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp cayenne pepper or less, to taste
  • 1/2 tsp packed light brown sugar
  • 1/4 tsp dried thyme

Steak bites

  • 1 1/2 lbs. steak strip steak, sirloin, ribeye, etc.
  • 2 Tbsp vegetable oil divided
  • 3 Tbsp unsalted butter
  • 5 cloves garlic finely minced or grated
  • minced fresh parsley for garnish

Instructions

Slice steak into 2″ pieces – set aside in a mixing bowl.

Season

In a small bowl, combine seasoning ingredients, next add to the mixing bowl with the steak bites and toss to combine well.

Preheat skillet

Heat a large heavy skillet over MED HIGH heat. Do this with a dry skillet, and heat for several minutes, or until you see a bit of smoke.

Sear (in small batches)

Add 1 Tbsp of vegetable oil and coat the pan.

Add half the steak (adding less steak if the skillet isn’t very big – do not overcrowd the skillet).  

Sear for 2 minutes on one side, next flip over to sear another 2 minutes, until browned.  Set aside on a plate. Now repeat with remaining oil and steak bites.

Make garlic butter

Reduce heat to MED LOW using the same skillet (do not wash it – save that flavor!), and add butter.  Once melted, add garlic and cook for 30 seconds. Use a wooden spoon to scrape those delicious brown bits on the bottom of the pan.

Combine and serve

  1. Turn off the heat, add steak bites back to the skillet and stir well to combine with the garlic butter.
  2. Serve hot, sprinkled with minced fresh parsley.

Because you will definitely want one of our most popular wines with this dish, I will share my favorites. I totally recommend the Ricord Merlot or the Nile Eddy Pinot Noir to enjoy with this meal. You may want to offer a variety of our vintages. I would also suggest the This will allow your guests to sample several of our wines. Any of our Napa & Sonoma Valley wines are superb! However, you can decide what you want as a side dish to go with this. I prefer mashed potatoes or grilled asparagus. Other suggestions are grilled zucchini, yellow squash, onions and tomatoes.
