Bacon Wrapped Chicken Livers & Labor Day Dishes

I have a fond memory from my childhood. It involves Bacon Wrapped Chicken Livers that my Dad would fix. Clearly, everyone loves bacon…but some may need to be convinced to try the chicken livers. Additionally, with this in mind, I want to help you to muster up the courage to try this dish.

My dad would roll out the grill onto the patio. Next, he would add the charcoal and get it going to the perfect heat. I recall the smell of the charcoal and the charcoal lighter. So Meanwhile, my mom would be in the kitchen preparing the meal. Sometimes she would ask for help and this is how I leaned to make these. We had them often in the Summer. Also, as a child I was always anemic and that may be part of the reason that we were subjected to this dish frequently. Who knows?

These Bacon Wrapped Chicken Livers Are Quick and Easy

Ingredients Needed:

  • ½ pound bacon
  • 1 pound fresh chicken livers
  • 4 tablespoons honey

Prep Time is 15 minutes. Cook Time is 20 minutes. Total Time is 35 minutes. Makes 4 Servings

Directions -> Can Be Grilled or Broiled – Bacon Wrapped Chicken Livers & Labor Day Dishes

  1. Place top rack 6 inches from broiler & preheat broiler.
  2. Bacon should be cut in half. Next, wrap bacon around the livers. Tightly fasten bacon to chicken liver with toothpicks. Place under broiler.
  3. Now broil livers until your bacon is crisp and and the livers are brown. About 15 minutes. Remember to turn livers at the halfway mark. If using a thermometer the temp should be 165 degrees.
  4. Enjoy along with honey drizzled over livers.

For instance, I remember my dad having a Coors Lite beer with the chicken livers. Who drinks that??? I call that Beer Water! LOL!! By the same token, as an adult, I try different beverages with my food. In fact, I love a Fine Wine with all of my meals. Similarly, some people really love having their wines delivered straight to their door. So, if that is something you are looking for you can GET IT HERE!

Today I am pairing my bacon wrapped chicken livers with our Freedom Chardonnay. I chose this because it takes a crisp dry white wine with lots of acidity to stand up to the flavors in liver and bacon. So liver and bacon is not a common dish. I use wine as a way to cleanse my palate. Most would use a red but I choose white.

Just as I love my Bacon Wrapped Chicken Livers, sometimes when I make this Pesto Pasta Caprese Salad; sometimes substitute a good Balsamic Vinaigrette instead of the Pesto. Put your own spin on this and enjoy it made several ways.

Pesto Pasta Caprese Salad:

Ingredients

  • 1 ½ C Rotini Pasta
  • 3 T Pesto, or more if you want
  • 1 T EVOO
  • ¼ t salt
  • ¼ t Garlic Powder
  • ⅛ t Black Pepper
  • ½ C Halved Grape Tomatoes
  • ½ C Small Fresh Mozzarella Balls
  • 2 Fresh Basil Leaves, Finely Chopped

Directions

  1. Boil large pot of water, lightly salted; Boil rotini until tender but a bit firm. About 8 minutes; drain.
  2. Mix Pesto, Olive Oil, Salt, Garlic, and Black Pepper in bowl. Add rotini. Toss to coat. Fold in tomatoes, mozzarella, and fresh basil. Enjoy! Enjoy! Enjoy!
