Appetizers: Peach and Brie Quesadillas

I’m always looking for a different type of Appetizers that is quick and easy. I truly believe that these easy Appetizers: peach and brie quesadillas: Peach and Brie Quesadillas w/ Lime-Honey Dipping Sauce may be one of the best recipes that I have found. These are quick, easy and delicious!!They look so good that I have to share.

Best Appetizers Ever!! Peach and Brie Quesadillas w/ Lime-Honey Dipping Sauce:

  • SAUCE:
  • 2 tablespoons honey
  • 2 teaspoons fresh lime juice 
  • ½ teaspoon grated lime rind

QUESADILLAS:

  • 1 cup thinly sliced peeled firm ripe peaches (about 2 large)
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon brown sugar
  • 3 ounces Brie cheese, thinly sliced
  • 4 (8-inch) fat-free flour tortillas
  • Cooking spray
  • Chive strips (optional)

Directions:

  1. Combine first 3 ingredients, stir with a whisk and set aside.
  2. Combine peaches, 1 Tablespoon chives and sugar. Toss gently to coat. Heat large skillet over medium to high heat. Then Arrange 1/4 of the cheese and 1/4 of the peach mixture over half of each tortilla. Fold tortilla in half. Coat pan w/ cooking spray. Place 2 quesadillas into the pan. Cook 2 minutes on each side or until they are browned and crisp. Remove from the pan. Try to keep them warm. Repeat steps for the rest of the quesadillas.
  3. Cut tortillas into 3 wedges.
  4. Serve with the sauce.
  5. Place chive strips on plate to garnish (optional).

Makes 6 Servings. One serving is 2 quesadilla wedges along with 1 teaspoon of sauce.

Secrets To Better Appetizers:

In addition to being delicious, these appetizers peach and brie quesadillas are so simple. Best practices are to put the filling on 1/2 of the tortilla. Simply fold it in half – this easy step makes them so much easier to handle. I like to use whole wheat tortillas. Wheat tortillas give it a sweet and nutty taste. Lime honey sauce adds to the rich buttery flavor of the filling. Don’t be afraid to try different fillings too.

Subsequently, I would like to suggest one of our favorite wines: the Moonlight Sonata Chardonnay is a perfect match with this Appetizers: peach and brie quesadillas. This delicious Chardonnay brings out the butter flavor of the Brie. Man Oh Man!! Even though I prefer reds, this Chardonnay really went well with these amazingly good Peach and Brie Quesadillas. Make extras so everyone will have enough for seconds!!
