Ingredients:
- 1 lb. peeled and deveined large shrimp
- Kosher salt
- 2 tsp. curry powder
- 5 tablespoons vegetable oil
- 1 onion – chopped
- 3 scallions, sliced thin: green & white parts separated
- 1/4 C sliced almonds
- 1 Tablespoon minced fresh ginger
- 3 cloves garlic, minced
- 3 Cups cooked white rice
- 2 Cups frozen riced cauliflower, thawed
- Sliced Persian cucumber, mango chutney, plain yogurt and lime wedges, for serving
This Cauliflower Fried Rice with Curried Shrimp Will Win You Over
First Step:
Take the salt and lightly season the shrimp. Toss with 1tsp curry powder. Now heat 2 tablespoons of vegetable oil in large skillet with high heat. You now add shrimp and cook. You want to cook until the edges are browned. Cook through 1-2 minutes on each side. Plate this.
Second Step:
Take 3 tablespoons of the vegetable oil into the skillet. Toss in onion and the whites of the scallions. Stir periodically as they cook. You want them to get soft and lightly browned: maybe 3 minutes. Stir in the almonds, ginger, garlic and the curry power that is left over. Cook this for about 1 minute until the almonds are toasted. Include the white rice, riced cauliflower and 1/2 tsp salt. Cook and break up the clumps while tossing. The almonds need to be toasted. This will take about 3 minutes. Add the beautiful shrimp, toss them until they are warmed – maybe 1 minute. Season dish with salt.
Third Step:
In conclusion: you evenly divide the fried rice/shrimp into the bowls. You can serve with cucumbers (sliced), plain yogurt, mango chutney and lime wedges. Sprinkle with the green scallions and enjoy!
